This is a forest flower available during February to March. Buds are cooked with badi, mustard paste, tomato, salt. Very tasty to eat. Food value is not known.

Kaddi Bhaja

Orissa is a nice state which integrates Tribal culture with main stream culture in every walk of Life. kitchen and dishes is also an example of it. How to prepare Kaddi Bhaja:-
Kaddi (soots of bamboo) is a favorite dish for all here. Soft root of bamboo is cut in small fine pieces like white threads and sold in vegetable markets during June-September. Handful of Kaddi is washed and keep for straining water. Chop onions, Garlic, Ginger and chilly in small pieces, add some Dhania leave also, then mix it with kaddi --add some turmeric power and salt to taste.and add sone Besan and make a loose watery paste with all ingrediants. Heat the fry pan with some mustard oil--spread the oil and then spread the paste on pan like a Dosa mix. You may add some fine pieces of tomato also, if like a sour taste.Cover it and bake on both sides by turn. Your kaddi bhaja is ready for serving hot with rice.
